Brittle production requires particular attention to the quantity and quality of ingredients which go into the mixture. Sugar is stirred using a ladle and slowly melted in a copper pot on a low flame. Once it has caramelised, taking on a typical golden colour, any of the following can be added: toasted peanuts, sliced almonds or hulled sesame seeds, and the ingredients are mixed to the desired consistency.

 

The production of almond brittle requires a careful concentration on quantity and quality of raw materials used in the dough. You have to merge mixing with slow fire, in a copper pot, the sugar using a ladle. Once caramelized, which means that sugar has got the typical brown color, we mix together by choice: toasted peanuts, sliced almonds, or hulled sesame beans and we proceed with mixing all ingredients up to obtain the desired dough.
